A Bit Of History

For several centuries, Tokaj wines were the natural accompaniment to the delicacies served at the great Royal European courts Mwho had selected it for its exceptional quality and glorious history. Louis XIV, who loved this nectar, called it "the Wine of Kings and the King of Wines", "Vinum Regum Rex Vinorum". Tokaj Aszu travelled around the world and inspired the most celebrated authors such as Voltaire, Goethe and Rabelais...

Virtually destroyed by the Phylloxera at the end of the last century, and then isolated in communist hands for 40 years, this region with its rich and glorious past is now reviving from ashes.

VINIFICATION

The vinification is made according to the great tradition in winemaking of Tokajhegyalja region.

To produce the Aszús, the shrivelled grapes affected by the noble rot are harvested in October and November. They are sorted berry by berry - according to their ripe condition - into small tubs called "puttonyos" which contain 25kg of Aszú paste. Then a certain quantity of tubs - 3, 4, 5 or sometimes 6 - will be added to newly fermented dry wine of the same year in a Gönci oak barrel containing 136 litres. After fermentation and crushing, the blend will be left to age in oak barrels for several years.

A particular caracteristic of Tokaj is the aging in the historic caves of the region, representing an amazing network deeply buried in the mountains. Their high humidity and the cladosporium cellare, a purifying fungus, provides the optimal conditions for the maturation of the Aszú wines.

The vinification has been made in the oxydated style during the years of communism. Actually, the trend is to use a more reductive style, which gives to the wines a very fine and elegant bouquet and which respects the old tradition of Tokaj Hegyalja.
