Trinity Oaks Merlot, blended with 4% cabernet sauvignon, was produced from a blend of 50% coastal grapes (Monterey, San Luis Obispo, and Santa Barbara counties) and 50% Lodi region grapes.
After a 10-day fermentation in stainless tanks, the wine was aged in American oak uprights to round out and soften its rich, cherrylike flavors.
Trinity Oaks California Merlot displays a complex, attractive aroma of ripe red cherry and plum fruit with hints of black olive, tea-leaf spice, and oak vanillin. The wine's medium-bodied flavors are supple and fruity, with cherry and spice notes and soft tannins. This tasty, varietally distinctive Merlot makes a fine match for herb-roasted chicken, pork tenderloin, spring lamb, meat loaf, and mildly spiced pastas.
