Snap Dragon picked the grapes in the cool hours of the day to preserve the delicate balance of flavors and aromas. At the winery, the grapes were gently destemmed, pressed and placed into stainless steel for a long, slow fermentation, allowing maximum extraction of their intricate nuances. Just before dryness, we arrested fermentation, leaving a hint of sweetness to round out the profile. |
