Ruby-hued, Navarro Correas' Merlot opens with rich aromas of ripe red fruit accented by fragrant earth and dusty cocoa. The mouthfeel holds medium weight, with strawberry jam and Bing cherries developing through the midpalate, and finishes with a touch of oak that gives the impression of vanilla and cinnamon. The well-integrated tannins and ripe fruitiness pair well with a variety of dishes from rosemary chicken to mushroom pasta.
The grapes were hand harvested in the cool hours and brought to the winery, where they were placed in stainless steel tanks at controlled temperatures. For maximum extraction of flavors and aromas, the wine was pumped over daily, keeping the skins and juice in constant contact. The wine was aged in partial French oak for approximately 12 months, imparting structure and sweet baking spice to the final wine.
