The elegant purple colour of this spicy varietal invites you to taste it, while it creates a remarkable intensity in the mouth through the combination of clove and sweet plum. Such intense persistence in the mouth is its sign of identity.
Grapes were hand harvested in the small hours to treat them kindly. Fermentation took place in stainless-steel tanks at controlled temperatures with selected yeasts. Winemaking also involved the use of special techniques, such as daily overpump and delestage that contributed to release the grapes' natural aromas and colours, and a maceration process of around 15 days that encouraged the wine's body and finesse typical of this varietal. A proportion of the blend was aged in French oak casks for approximately 12 months in climate controlled conditions with adequate temperature and humidity. After the wine was aged in oak, it was bottled and stored for at least 3 months, whereby the wine's required balance and roundness was achieved.
