Pleasant aromas of green apple and tropical banana, topped by hints of lilac, open this pale-hued Chardonnay. Soft, delicate flavors are accented by crisp fruit and a slight oiliness. Well-balanced and refreshing, the wine carries suggestive notes of tropical fruit and flinty minerality through the lingering finish. This versatile Chardonnay pairs with an array of dishes, including grilled white fish garnished with vegetables, roasted chicken or pasta in a rich, creamy sauce.
They hand picked the grapes in the early hours of morning while balancing acids remained high. Keeping the grapes cool, they pressed the clusters whole to retain the delicate nuances of the Chardonnay. Temperature-controlled fermentation in stainless steel brought forward the crisp green apple and mineral notes. They then aged the wine in 30 percent French oak casks for twelve months to build structure, round the edges and impart the soft, pleasing mouthfeel.
