The grapes for Edna Valley Vineyard's Cabernet Sauvignon were selected from some of the best vineyards of northern San Luis Obispo County. Their criteria for these vineyards included well-drained soils, favorable hillside locations, and owners who truly desire to “grow” good wine. After fermentation in stainless steel tanks, the wine was aged in French and American oak barrels to mature slowly and develop complexity. This Cabernet features luscious blackberry, chocolate, and coffee flavors, with spicy aromas of black pepper and vanilla. With full, slightly masculine tannins and a bit of oak, the creamy finish pulls it all together for a lasting impression.
