In this perfect marriage of varietals, Cabernet Sauvignon and Shiraz come together in elegant layers of fruit-intensive flavors. Flaunting bright boysenberry fruit, the Shiraz complements the rich cassis and mocha tones of the Cabernet Sauvignon. The flavors are nicely structured and held by good acidity, persisting through the lengthy finish—a perfect complement to rich meat dishes such as braised lamb shanks in a rich adobo sauce or grilled steak dressed in herbed butter. Traveling down under, Archetype Winemaker Bob Masyczek sought out the deepest, darkest, richest grapes to make a Cabernet-Shiraz exploding with flavor and flaunting Barossa style. Grapes were picked at the peak of ripeness and then destemmed and crushed before entering stainless steel tanks for fermentation. Regular pump-overs and secondary malolactic fermentation intensified the varietal expression and bold fruit character. The wine was aged in a combination of French and American oak for 12 months. |
