The Covey Run Cabernet-Merlot is actually a blend of three grape varieties. Cabernet Sauvignon (43%) is blended for structure (acid and tannin), Merlot (42%) is blended for roundness and richness, and Cabernet Franc (15%) is blended for fruitiness and spiciness. These same varietals are the classic blending components used by vignerons in Bordeaux to make the lovely red wines produced there.
