Acacia's 2007 Chardonnay shows elegant layers of citrus, apple and nectarine fruit character from grapes grown in the cool, wind-swept vineyards of the Los Carneros region. Complex honeycomb and crème brûlée nuances add interest to the fruity aromas and then persist through the flavors and lingering finish. Barrel fermentation and aging add notes of toasted hazelnut and weight to the palate. Their Chardonnay’s silky, expressive flavors pair beautifully with rich entrées, such as lobster bisque, sautéed chicken breast with white truffles, grilled scallops or fettuccini Alfredo.
They barrel fermented the juice with native yeast to give the wine layers of flavors. To balance the crisp acidity with creamy notes, 65 percent of the wine completed malolactic fermentation and then they stirred the yeast lees every two weeks to integrate flavors during barrel aging. For complex oak spices, they chose a selection of barrels from more than 20 of the finest coopers.

Drink now. 70,200 cases made. –JL" -Rated 87, Wine Spectator Untitled "There’s a Chablis-like elegance to this Chardonnay in the dryness and minerality, which stimulates the palate with a chalky, steely tartness. That’s not to minimize the pineapple and pear fruit, much less the buttered toast and vanilla cream from oak. Very nice. Easy to find, with more than 70,000 cases produced. — S.H. (11/1/2009)" -Rated 89, Wine Enthusiast Untitled "Crisp, green-apple fruit is teamed with touches of sweet Meyer lemons and subtle oak spice first in the mid-density aromas and again in the easy-to-taste flavors of this clean and comparatively straightforward Chardonnay. Slightly rounded in feel and lifted by a bit of balancing acidity, it is ready to go now and requires no further aging." -Rated 87, Connoisseur's Guide to California Wines
