The winemakers goal in crafting Dynamite Chardonnay was varietal fruit intensity and food-friendly acidity without the undue distraction of too much oak. The majority of grapes were hand-picked and whole-cluster pressed. The wine was fermented in a combination of stainless steel and oak and a portion of the wine was aged sur-lie for 8 months in a combination of oak barrels. This lovely wine offers juicy aromas of green apple, white peach and pear with a hint of toasty baking spices. The palate reveals crisp flavors of apple and nectarine and excellent acid balance. The wine finished dry and refreshing with just a hint of vanilla and a lightly creamy texture. Stylistically, this wine accommodates a wider range of foods than most California Chardonnays due to its crispness and the light-handed use of oak in its production. Enjoy with richer fish dishes like grilled tuna or lobster pasta with cream sauce or ripe, buttery cheeses like Camembert, Mt. Tam triple crème.
