For over a decade, Heron Wines has been making distinctive, delicious, varietal wines from the best places on Earth. For this Cabernet Sauvignon, they sought out vineyards in prime higher-elevation locations. The combination of warm days offset by cool nighttime temperatures slows the maturation of the grapes and maximizes flavor versus alcohol. Almost as important is that the vineyards are managed by people who are as passionate about quality and character as they are (and are willing to sacrifice a bit of volume to achieve it.) The result is a rich and interesting wine.
Heronís goal in 2005 was to again produce a wine that has all the complexities and intense flavors of a big Cabernet but is better in weight and style for easy drinking and exceptional pairing with food. The big challenge is to find that perfect balance of structure, fruit and oak so that the greatest qualities of the varietal can shine through seamlessly. The result is a deep, lush and highly aromatic wine that is rich with red currants, ripe black cherries and cassis, and balanced by beautiful tones of vanilla from French oak. Enjoy!
