First impressions are of the beautiful golden straw color. Upon swirl, pungent aromatics deliver rich pineapple and stonefruit with hints of toasted marshmallow and coconut. On the palate, layers of apple pie are followed by rich mid palate pineapple. Soft creamy mouthfeel is balanced by natural bright acidity.
This Unbridled Chardonnay comes from Bien Nacido Vineyard located in the renowned Santa Maria Valley. The Santa Maria Valley is known for its east west direction which is unique on the West Coast. This east west running valley and its proximity to the Pacific Ocean provides plenty of cool coastal air and fog, resulting in an ideal climate for ripening Chardonnay and Pinot Noir while maintaining elegance and balanced acidity.
Chardonnay is hand-picked into half ton bins and delivered to Wild Horse first thing in the morning. The fruit arrives cold and is dumped directly into the press, and lightly squeezed to maintain the balanced bright acidity and rich fruit flavors. The juice is chilled and allowed to settle overnight, then racked to barrel to ferment in French oak barrels of which 33 percent are new. When the wines finish primary fermentation the lees are gently stirred to soften the mouthfeel and bring richness to the wine. Malolactic fermentation is not allowed to complete in order to maintain natural acidity.
