Girard's 2006 Napa Valley Cabernet Sauvignon was created by their winemaker, Marco DiGiulio, to be a smooth, easy drinking Cabernet Sauvignon; however the wine does possess the desired acidic balance for proper food pairing. Special attention was paid in the following areas: the grapes were handled gently upon arrival at the winery to maintain whole-cluster integrity; a maceration process was used to minimize the tannin extraction; and finally, the wine was aged in a higher percentage of used barrels to minimize oak tannins.
The blend consists of 85% Cabernet Sauvignon, 10% Malbec and 5% Petite Verdot. The aromas present lush notes of blackberry, kirsch, blueberry and very subtle notes of baking cocoa and spices. On the palate, the wine is medium to full-bodied with supple, well-integrated tannins.
