Each variety selected for this blend brings its individual characters and distinct personality: spiciness from the Syrah, cherry and raspberries from the Sangiovese and Barbera, blueberries from the Tannat, cassis from the Grenache and chocolate from Mourvèdre. A wonderful mix of the best each variety has to offer.
The co-fermentation of different varieties has been used whenever possible based on the grapes that are ripening at the same time as their pH. Cold soak a couple of days, 1-2 delestage per day. Partially barrel aged.
Food Pairings: Garlic-Roasted Chicken, Corn on the Cob with Chipotle Butter, Herb-Crusted Filet, Pizza, Hamburger…any burger, meat…raw or cooked.
