The bright pale gold color underscores the delicacy of the countless bubbles and the perfect ring they form around the edge of the glass. The nose, though slightly closed, is very promising, with delicate hints of flowers and signs of a deliciously fruity and elegant youth. To taste , the attack is straightforward, direct and structured, underlined by a balanced dosage and a persistant minerality.
A delicate champagne, with the stamp of an exceptional vintage, excellent as an aperitif paired with a tasty verrine or puffed cheese pastries. Enjoy it with slightly iodine seafood dishes: scallop carpaccio, oysters, seafood cooked "en cocotte", grilled lobster with girolles, and, for those who dare, fresh pan-fried langoustines... with what else? Champagne of course!
72 % Pinot Meunier, 27 % Chardonnay, 1% Pinot noir Grapes from their older vines and best parcels are used for this cuvée. It represents a mere 10% of our production, only from the best years.
Natural clarification (Gravity) just after pressing. Alcoholic fermentation in stainless steel vats at 18-20 °C followed by malo-lactic fermentation. Bottling takes place the following January. Secondary fermentation and ageing "on the lees" for 24 months minimum.
Store your bottles horizontally, away from light, at a constant temperature (10-15 °C). This champagne should be consumed within 5 years. Best served in flutes, between 6 and 9 °C.
