To capture and complement the classic qualities of Sauvignon Blanc, Olsen harvested the grapes cool and gently pressed. After settling, the fermentation was initiated by the addition of VL-3 and Premier Cuvee yeast. The wine was fermented in temperature-controlled, stainless-steel and bottled early following vintage to preserve the freshness and vibrancy of the wine.
This bright, vibrant Sauvignon Blanc has classic aromas of lime, gooseberry and grapefruit. Fresh, ripe melon and citrus flavors lead to a crisp, flinty, long finish.
