When you’re working with great vineyards in cool climate appelations, preserving the fruit should be every winemaker’s first priority. The 2007 harvest had all the qualities Heron looks for in a great vintage. The moderate summer and cool harvest made for great acid, sugar and Ph levels. To keep those in balance, they did not do any Malolactic fermentation and aged almost half the wine in stainless steel tanks. The vintage lends itself to a crisper style, with flavors of lemon, pear and orange peel. Just the right time in French oak underscores the lush yet clean, fruit-driven wine with a hint of vanilla. Refreshing and dry, it is pure, unadulterated Chardonnay.
