CHARACTERISTICS COLOUR : Ruby red to garnet red BOUQUET : Vinous, intense, becoming more delicate as the wine ages TASTE : Dry, round and slightly tannic, with good body FOOD PAIRING: At its best at room temperature and when opened an hour before serving. Pair with savory dishes and strong cheeses. WINEMAKING PROCESS Grapes are collected only when well ripe. After pressing, fermentation continues for 10 days at 28-30 degrees centigrade to give the wine the best structure and the best color. The wine is then separated from the grape skins and stored at 25 degrees until the end of malolactic fermentation. Wine naturally clarifies with subsequent decantings. |
