Napa Saki

Quality: Napa Saki is a Super-Premium, specialty sake. As a rare, Junmai-Ginjo style sake, it is made from a unique, handcrafted Koji-rice which is polished to 58% of the original kernel size. Giving this sake its Super-Premium status is the addition of the secret Japanese mother yeast strain used in the fermation process.

Origin & History: Napa Saki is made from specially grown Akitakomachi rice, premium sake rice of Japanese origin, cultivated in the mineral-rich soil of California. Most sake produced in the U.S., and several from Japan, are made from ordinary rice strains. Just as the grape is reflective of the wine quality, so is the rice strain paramount to sake quality. Note: of the 120,000 rice strains worldwide, only 46 varieties are specially made for sake, and of these, only two are available in the United States. While many Japanese and American breweries have taken to automation in the sake making process in order to cut production cost; Napa Saki Koji is handcrafted and nurtured for 48 long hours -- in keeping with the ancient Japanese tradition. Napa Saki Koji is the magical enzyme that converts the starch in rice to glucose.

Specifications: Napa Saki is filtered eight times, pasteurized twice, and aged six months in temperature-controlled stainless steel-lined tanks. The product is made strictly from Japanese sake rice, iron-free water, and proprietary secret Japanese sake yeast. Alcohol content is 15% by volume. Sake is naturally sulfite-free and absolutely no additional chemicals or preservative have been added to Napa Sake, which has a maximum shelf life of 18 months. As with all sake products: 1) fresh consumption is best; 2) avoid exposure to extreme heat and direct sunlight; 3) open bottles must be refrigerated.

Serving Suggestions: Napa Saki is best served chilled and is a delicious accompaniment to a light meal when served cold or slightly warm (never boiled). While Napa Saki is a refreshing specialty wine (shu) and is easily consumed alone or with food, it is highly mixable - much like vodka and gin! It's great with after dinner liqueurs too.

Tasting Notes: Napa Saki has a soft mouth feel with a smooth finish. The aroma is slightly sweet while the flavor is clean and a bit austere. As compared to a wine made from grapes, Napa Saki is completely sulfite free and has about one-third the acidity of most red wines.

Drink Recipes: Saki-to-Me - Enjoy Napa Saki slightly chilled in a wine glass topped with a cucumber slice. Ty-Won-On - 2/3 Napa Saki and 1/3 Mezzaluna Italian Vodka, a splash of Chambord, garnish with lemon peel. Napa-tini - 2/3 Napa Saki and 1/3 Liquid Ice Vodka, shaken, not stirred, olive garnish. Buddha Shooter - 1/2 Napa Saki and 1/2 Lapis Anejo Tequila, shaken. Hari-Kari - Shot glass of Napa Saki dropped in a mug of Red Bull.

Food Coupling: Most any lightly prepared dish such as Asian and vegetarian foods, sushi, cheese, light sauces, pasta, green salads, poultry and most steamed or grilled seafood.
