Producer Background: The striking Abbotts range of wines from appellations in the Languedoc reflects the experiences of Australians Nerida Abbott, wine researcher turned winemaker, and Nigel Sneyd, renowned international winemakers who bring a modern approach to traditional growing areas in the South of France.

Nerida and Nigel work closely with grape growers in producing and selecting the most concentrated and physiologically ripe fruit in the vineyard to produce wines with full, matured fruit characters and soft tannins.

Vinification: Produced from Shiraz fruit selected from the diverse microclimates throughout the Minervois appellation region. Fruit from low yielding vines is crushed and destemmed and fermented with careful control of the temperature. The wine is left to macerate on skins for up to 21 days to extract the maximum colour, fruit characters and soft tannins. After malolactic fermentation the wine is blended and bottled in a state of the art bottling hall.

Tasting Notes: A complex wine with concentrated berry, spice, licorice and tobacco aromas complemented by a long smooth palate with fine tannins.
