All Tequila is Mezcal, but not all Mezcal is Tequila.
Production requires special care beginning with the cultivating of the Agave, which takes from 7 to 9 years. Only the mature plants are harvested, the hearts are cooked in underground ovens to convert the starch into natural sugars. The sweet hearts are mashed and fermented. The fermented mash is then distilled. It is important to take into consideration that this is a completely natural product.
