With lively aromatics and rich, complex flavors, Provenance's 2006 Rutherford Cabernet Sauvignon captures the famous attributes of Napa Valley’s famous Rutherford region. The wine’s aromas open with lush black cherry and blackberry character, infused with subtle hints of mocha, flinty minerality and black tea. Its expansive fruit flavors are packed with ripe berry, currant and plum—-with dark chocolate and toffee nuances—that persist on the palate. Balanced acidity and ripe, muscular tannins frame the midpalate flavors. This wine’s graceful style and cocoa powder finish make it a truly classic Rutherford Dust Cabernet Sauvignon.
They destemmed the grapes without crushing to maintain at least 60 percent whole berries. Cold soaking of the must before the two-to-three week fermentation gently extracted the opulent color and flavors, while 18 months of barrel aging added warm vanilla oak tones. Dashes of Petit Verdot and Malbec deepened the wine’s hue and added spicy notes.
