Angels Share refers to the small amount of wine that evaporates from oak barrels during maturation. Mediaeval winemakers assumed that angels watched over the wines, and that they took their share. Selected from parcels of exceptional McLaren Vale fruit, this wine is made in a true Australian style and will appeal to both angels and mortals alike.
The grapes were crushed into and fermented in open top potters with regular pump overs; three daily during peak fermentation to extract color and tannin. Following 6 to 12 days of maceration the dry free run is drained to tank. The skins are then pressed and the pressings transferred to the same tank, the wine is then racked to barrel where malolactic fermentation takes place. Minimal fining and non filtered. It is then aged 10 months in new and old American oak hogsheads.
