For Depaz, the art of creating such an extraordinary rhum is unique because it originates with seasonally harvested, fresh cut blue cane. Depaz Rhum is also privileged to have received the coveted Appellation d’Origine Controlee (AOC) designation confirming its strict adherence to precise standards of excellence. The harvesting of the cane, generally in the spring, ushers in a festive atmosphere at the estate, as the blue cane crop is primed to yield its rich bounty. The first press, derived from the crush, produces the wonderfully unique result that, after careful aging in oak, evolves into something quite special. |
