In the cool early-morning hours, they handpicked the Cabernet Sauvignon grapes into small bins. After they were destemmed and crushed, the must was fermented in stainless steel tanks with two punch-downs per day to develop its deep red color and lush dark fruit flavors. To achieve the wine’s smooth, fruit-forward style—with the Cabernet Sauvignon grape flavors taking center stage—they pressed the wine as soon as fermentation stopped (no extended maceration) and oak aged only a small portion of the wine. The result is this approachable, food friendly wine that can be savored immediately.
