The vineyards are located on the slopes of Bergheim which face South / South East, enjoying maximum sunshine. The soil is a mix of clay and limestone. The limestone, deep "Muschelkalk" (fossil) below the surface, allow the grapes to reach maturity. All grapes are picked and sorted by hand. The wine goes through a settling of the juice (debourbage) which eliminates the impurities contained in the must. Fermentation takes place in wooden, stainless steel and glass vats under temperature control.
This wine is ideally paired with grilled seafood, poultry in light sauces, brie and other semi soft cheeses.
