Appearance: clear as water
Nose: lime blossoms, banana, soap store on the beach
Palate: sweet red peppers, citrus, sea salt
Finish: clean, short, nothing but cane
After fermentation and pot still distillation, they let the spirit rest in steel tanks for over one year. This process takes the edge off and smoothens the flavor.
