|  | | Named in commemoration of the year in which the first expertly aged Tequila was unveiled, 1800 still follows the standards of the original formula, created in 1800: Eight-year-old agaves and superior french and American oak wooden barrels selected by the 1800 Maestro Tequilero (Master Tequila Blender) are used. It’s a painstaking process – but one that yields a super-premium product.
Color: Dark Amber with copper highlights.
Aroma: Oak driven agave with caramel, vanilla and toasted coconut flavors; spicy notes with marzipan, mineral, ripe fruit, and orang rind.

| | |  | | The Tequilana Weber Blue Agave plant is the core and essence of Cabo Wabo Tequila. Rooted, according to legend, by falling stars, thus manifested the plant's blue tint and its reach to the sky. Though it can be hastily exploited over its lifetime, the agave plant typically matures and is harvested by the wisest farmers between the ages of 8-12 years. Until then, it is respected, nourished, bronzed and guarded by growers holding it in the highest esteem.
Upon its harvest, an agave plant gives birth to the next generation through its "raizomas" or roots extensions, which are planted on new, but equally sacred, ground. The heart of the plant travels to the factory on its journey to becoming Cabo Wabo Tequila.
At the factory, stone steam-heated ovens cook the hearts. The baked and cooled agave core is then smashed and grinded, and its honey-like nectar is removed and stored for fermentation.
Fermentation follows and is completely natural, with no chemicals added.
The Distillation to 110 proof is a two-step process using pure spring and well water-
First, "Breakage" removes the larger impure particles to rid the bad, harsh flavor.
Second, "Rectification" purifies, refines and improves the aroma and alcohol content.
Tequila Anejo is aged in oak barrels for 1 to 5 years.
The fermented juice is then fine-tuned and regulated by our master tequila maker, and after that The Cabo Wabo Tequila is bottled in unique, hand-blown artisan glass bottles.

| | |  | | The origins of Casta dates back to the 1920s. At the time of the Mexican revolution, when Lt. Colonel Jose Pascual Gutierez, who later become a Brigadier General, battled with the revolutionary army in the state of Jalisco, Mexico.
His gallant character and exquisite taste led him to recognize the superb quality of the tequila manufactured at the hacienda of Mr. Avelino Ruiz, son of a pioneer in the production of the now famous Casta tequila.
On one of his many visits to the small town, a group of revolutionary soldiers tried to raid Mr. Ruiz's property. Heroically, General Guttierrez forcefully drove off the invading platoon.
Grateful for saving his land, Mr. Ruiz rewarded him with the most precious treasure, the formula for making Casta tequila.

El Tesoro de Don Felipe is the last of its kind. This work of art is the only tequila still produced entirely in the old traditional method: by Hand. Don Felipe personally walks his fields and selects agave plants for their maturity and quality. The harvested agave is slowly steamed in brick ovens and crushed with a stone wheel. It is then fermented in wood tanks and distilled to exactly 80 proof so the water is never added to dilute the tequila.
El Tesoro is aged in American oak bourbon barrels which are placed in Don Felipe's humidity controlled cellars. There they sleep, the flavor and color developing naturally with time, until he select them for blending and bottling.
Estate Grown, Produced, and Bottled
| | |  | | El Tesoro Aniversario was made from agave harvested in 2000 by Carlos and his late father. The typical sugar content of blue agave lies between 30-33%. This agave had the highest sugar content of any of the plants they had ever harvested, 37% -- they had to do something special with it.
Was it a coincidence that the distillery was built in 1937 and the agave had 37% sugar content? Was it a coincidence that if we aged this tequila for 7 years longer than any other tequila is aged that it would be ready for the distillery's 70th anniversary on 7/7/07?
What is certain is that this tequila is truly unique and special.
Aged for seven years in white oak American bourbon barrels, this limited-edition "Extra Añejo" offers a rare tequila experience. Carlos says that El Tesoro Aniversario is "soft and sweet, with scents of chocolate and vanilla and a hint of spice. There are stronger tastes of oak, with an almond-like flavor, and a rich agave finish."
