Dessert Wines
Sauternes is the great dessert wine from Bordeaux. The grapes are left to hang on the vine until a fungus attacks them. The fungus concentrates the flavors in the grapes.
Sherry is found in varying degrees of sweetness. The scale begins with Fino, Amontillado, Manzanilla, Cream, and ends with Oloroso.
Tokaji is the noble wine made in Hungary. Portions of the vineyards are allowed to over-ripen. When the over- ripe grapes are harvested, they are put into buckets (puttonyos) and then added to the fermenting wine. The more buckets, The sweeter the wine.
All Ports are made in the same general way. Midway through fermentation, Brandy is added to increase the alcohol level. The result is a high alcohol, sweet wine. White Port uses white grapes. Ruby Ports has a deep red color, while the Character ports have the same color, they are made from better quality grapes. Tawny and Aged Tawny have a brownish color with their only difference is the Aged Tawnys are at least 10 years old. Vintage Ports are only made in superior vintages. These wines are capable of aging for over 100 years.
