The grapes were hand-harvested and crushed into small macro bin fermentors. The caps were punched into the fermenting juice twice daily. To add character, this wine was inoculated with three different yeast strains, including the Rockpile isolate. In addition, the wine benefited from Rosenblum’s diverse barrel program; primarily French in origin, oaks from over twenty coopers heighten the character of this stunning wine.
The bouquet of this rich, extracted wine shows rich black cherry and black currant with hints of vanilla and black pepper. The flavors are ripe black cherry, currant and creamy spice with notes of dark chocolate.
This rich Zinfandel will nicely accompany hearty pasta and grilled marinated salmon, slow-smoked pork ribs, or duck à l’orange.
