This is the seventh release from Jefferson's Ocean Aged At Sea and the first bottled at cask strength, a hefty 56% ABV. For the collection, barrels that have been aging bourbon for about 6 to 8 years are transferred to a ship that sails for several months at sea. This well-traveled bourbon has crossed the equator 4 times and hit 30 ports of call on 5 different continents before being bottled.
Aroma of cinnamon buns, orange zest, burnt sugar and marshmallow. Thick notes of salted caramel, figs and chocolate fudge dominate the palate, and lead to a playful finish accented by sweet mint, lemon cake and nutmeg.
This bourbon started out as an experiment in a curious effort to discover what would happen if bourbon was left to weather the extreme elements: temperature fluctuations, salt air and the gentle rocking of the ship. The result was a thick, dark bourbon that showcases complex flavors reminiscent of other spirits; the almost black color and caramel flavors resemble a dark rum as the sugars within the barrels caramelized; the briny, savory taste from the barrels breathing the sea air is reminiscent of Islay Scotch; and at its core, it's a true bourbon.
